Brush an oven deep baking dish with half the olive oil and lay the fish down.

Rinse the fillets and pat them dry with a few sheets of paper towels.

Once you have reached a well-rounded medley, set in fridge uncovered and ready to serve when the fish is done.

In a mixing bowl, add all the ingredients together and gently mix with 2 soup spoons.

This will give it time to cool in the refrigerator and allow the flavors to mix and develop together.

One very important step is to build your salsa before cooking the fish.

1 tbsp of granulated or fresh minced garlic.

4 to 6 Mahi Mahi filets (if frozen, thaw and pat-dry before cooking).

While we won’t be making our yearly tropical trek this year, it doesn’t mean that we can’t reminisce through one of our favorite dishes, Mahi Mahi with Mango Salsa.
